If you keep herbs and spices handy, make sure you are keeping them in a dark, cool area. Their flavors will be weakened when they are exposed to light, heat or humidity. Herbs and ground spices usually retain their flavor up to a year. Spices that have not been ground may still be worth using for three years or a little more. The length of time that they stay fresh depends on how they are stored.

When making waffles and pancakes in batches for breakfast, you will want them to stay warm until it’s time to eat. Crank the oven up to 300 degrees. After the pancakes and waffles are finished cooking, place them on a plate. Then place the plate in the oven so they can stay warm.

Always make sure to use nylon and silicone spoons/spatulas if you are using nonstick cookware. Metal or wood utensils are harder on the nonstick finish, and can gouge or scratch the coating which reduces the pan’s effectiveness and can get flakes of coating in your food. This could not only be dangerous, but also very unappetizing.

It can be very useful to think large when making your favorite chicken stock. Plan on preparing a large batch so that the excess can be frozen and used later. There are a variety of recipes that call for chicken stock, so having it on hand is always a good idea. First, cool the stock and then stick it in the freezer.

When you are putting seasoning on meat, just season a small piece first. Certain foods like meatballs, hamburgers and meatloaf could require very careful seasoning. Do not cook the entire thing right after you season it. You should make a small patty first. This is a good way to find out if you got the seasoning right.

You should consider replacing your spices about twice a year. If the spices are too old, they are going to lose a good bit of their flavor. Share your spices with friends or relatives if you will not use as much as you buy.

Make stews and soups even healthier by using nonfat stock or broth. Use a lot of vegetables and lean meat to help to keep the soup low in fat. As soon as the soup is done cooking, put it in the refrigerator to chill. This will cause the remainder of the fat to rise to the top and congeal. Once this happens you can easily remove the fat that has hardened and discard. There is approximately 100 calories per tablespoon of fat, which can make a big difference!
